Beef . . .

 . . . It's what's for dinner. 


On Monday the quarter of a cow we ordered was ready to be picked up. We couldn't be more excited. Taylor and I were out shopping for pictures for her room before we picked it up and she even told me she was more excited about getting the beef than she was her room. This girl loves steak! 

A few years ago while we were at the stock show DJ and I were discussing how nice it would be to buy our beef from a rancher instead of buying it at the grocery store. That's when we ran into Dennis from Craig Angus Ranch. We got their information and checked into them some more when we got home. We were sold.

The first time we bought half a cow and that lasted us just over a year. It's been awhile since we ordered any beef and to be honest I was tired of buying meat at the grocery store. It doesn't taste the same, doesn't cook the same and as we all know, it's expensive. So fast forward to this year. 

When we went to the stock show we wanted to see if we could find the booth Craig Angus Ranch usually has set up, just to say hi. You see, we love this family. They were incredibly nice the first time we ordered from them and every year since then we have gotten a Christmas card from them. DJ and I love that. I think it says a lot about their Ranch and who they are. We have a soft spot for down-to-earth, family run companies.

When we were at the stock show we didn't plan on ordering any beef but when Theresa told us they still had half a cow left that would be taken in within the next week it almost seemed like fate. We no longer have our large chest freezer so we knew we couldn't order the entire half but a quarter would fit in our freezers nicely.  

And look how nice it looks


It might not look like a whole lot but believe me - we will be set for a while. I organized everything by type and made sure to stock up the freezer in the kitchen with a mix of everything. I've already been cooking with it and oh my goodness there is a big difference just in how it cooks! And since it's snowing today I'll be using some of our stew meat to make homemade Beef and Vegetable Barley soup.
